Jamaican Dirt - Caribbean Spice Blend

Use Jamaican Dirt as a dry rub for jerking, smoking, or grilling chicken, pork chops, ribs or sausage.

Mop Sauce: Whisk 2 tbsp. Jamaican Dirt with 1/2 c. apple cider vinegar, 1/4 c. lager beer, 2 tbsp. each of lime juice and olive oil, 1 tsp. Worchestershire sauce. Use it as a basting sauce. Serve with corn bread or Jamaican Festival Bread and roasted vegetables.

 

Mix with olive oil and spread onto fried chicken.  Sprinkle onto eggs, popcorn, salads French fries, and sandwiches. Mix with sour cream, milk and mayonnaise for a tropical chip or vegetable dip.

Jamaican Dirt Spice Blends are sifted prior to packaging.  Stand up bags are sealed and zipped to keep the contents fresh. Shaker spice jars  are sealed with a pressure sensitive liner. Store in a cool, dry place, and away from heat. Products may clump due to heat, humidity or improper seal. If your spice blend is clumping, remove from package and resift, or place in a coffee grinder or blender.

Earl Gage Jr. was a pioneering figure as the first Black firefighter in San Francisco. Born on November 19, 1926, in Beaumont, Texas, he moved to San Francisco with his family in 1945. Earl Gage Jr. pursued higher education at San Francisco City College and the University of California, Berkeley, focusing on pre-med studies before being drafted into the United States Army.

In 1955, Gage broke barriers by joining the San Francisco Fire Department, where he faced significant racism during his early years, enduring hardships such as having his mattress soiled and facing threats from the public. Despite these challenges, he became a pivotal advocate for diversity within the department, later transitioning to roles in community services and becoming the first Black man to hold a departmental command position.

Throughout his career, Earl Gage Jr. contributed immensely to increasing racial diversity within the San Francisco Fire Department, notably hiring Robert Demmons, the city's first Black fire chief. After retiring in 1983, he continued to influence the department's diversity initiatives, and in 2020, part of Willow Street was renamed in his honor by the San Francisco Board of Supervisors.

Earl Gage Jr. passed away on July 30, 2017, leaving behind a legacy of courage, resilience, and commitment to equality in service. His contributions continue to inspire and shape the firefighting community in San Francisco and beyond.
